Recipe below 👇🏼 Ingredients 10 eggs, whisked 1 sweet potato, cut into small cubes 1 capsicum, sliced 1 zucchini, sliced 10-12 cherry tomatoes, sliced 2 cups spinach Generous sprinkle of feta Salt & pepper, to taste Method: 1. Roast your sweet potato, capsicum and zucchini for 40 minutes on 180*C or until soft. 2. Pour your roasted vegetables into a medium sized lined baking dish. 3.
