20min · 3 servings Ingredients: • 4 Eggs • 1 white onion, chopped • 1 zucchini, chopped • 1 bell pepper, chopped • 1 cup spinach • 1 jar of of marinara sauce or 1 can of tomatoes • 1 tablespoon minced garlic • Goat cheese • Parsley • S+P • Paprika Garlic Powder Directions: 1. Sauté your chopped veggies in a hot pan with olive oil. 2. Add minced garlic and season with your seasoning. 3. Pour in your marinara sauce or diced tomatoes and mix well. 4. Make small holes with your spoon and crack your eggs in. Season again with salt and pepper and sprinkle goat cheese on top. 5. Cover the pan and cook for about 5-7 minutes, until the white part of your eggs are cooked. 6. Garnish with chopped parsley and enjoy with toast!
