Copy cat Nando’s PERi PERi sauce
Spicing up my homemade creations with a dash of Peri Peri. Ingredients: 3 to 4 Red & green chillies, 4 Birds Eye chillies or Piri piri chilli, 1 inch sized piece of Ginger, 6 to 8 cloves of Garlic, 1/2 of a medium size Onion, 1 whole Bell pepper, 3 Bay leaves, Peels of half a Lemon, Juice of 4 Lemons, 2 tbsp Chilli flakes, 1 tbsp Sugar, 1 tbsp Smoked Paprika, 1 tbsp Salt, 1 tsp Black Pepper, 1 tbsp Dried thyme, 1 tbsp Dried dill, 1 tbsp Dried oregano, 3 tbsp Vinegar, 1 & 1/2 cup Olive oil.

Scallion Ginger Chili Oil (lasts two weeks in fridge) -3 tbsp chili -3 garlic cloves, minced -2 scallions, sliced -1/2 inch knob ginger, grated -1/2 cup oil, hot ^mix everyting except oil in a bowl, then add in hot oil. season with: -1 Tbsp black vinegar (or rice vinegar) -1 Tbsp soy sauce -1 Tbsp oyster sauce *adjust this to ur liking To make the dipping suace: -3 tbsp SGC oil -1 tsp sugar -2 Tbsp water (to water it down so u can eat it as a soup sauce form!

2 small tortillas
2 gherkins
Sprinkle of lettuce
Half an onion
2 squares of light burger cheese

For the sauce:
Use burger sauce or to make a lighter one:
1 tbsp of light mayonnaise
2/3rds tbsp of ketchup
1 tsp of mustard
(Make more if you want more sauce😄)
