Zucchini Pineapple Bread- delish! A very forgiving bread. I substituted half the oil with applesauce and flax seed, also used Egg Beaters instead of eggs. It is still moist and yummy! Even fairly good for you can taste good! Will definitely be making again and again (work week breakfasts!!)
For Raw Hummus: 2 cups of zucchini 1 clove of garlic 1 tsp. of cumin 2 tbsp. of lemon juice 1 cup hulled sesame seeds Place all ingredients in your NutriBullet tall cup and extract. Keep blending until you reach your desired consistency. Adjust seasonings to your liking, and enjoy.
