Sweet Potato Brownies: - 2 medium to large sweet potatoes, - 2/3 of a cup of ground almonds, - 1/2 a cup of buckwheat flour (brown rice flour will also work), - 14 medjool dates, - 4 tablespoons of raw cacao, - 3 tablespoons of pure maple syrup syrup, - a pinch of salt
Carrot cake - What I love about this recipe is that it's healthy, but you still get to have icing. Made with whole wheat flour instead of white and substituted applesauce for the most of the oil. Didn't measure icing - just blended OJ and powdered sugar until I got the consistency I was after.
