Making your own paste drastically improves the flavour of a home-made curry. Sara Barton, founder of Brewster's Brewery, likes to serve her Thai green curry recipe alongside a light hoppy beer to complement the heat and flavour.
Thai Green Curry. A simple recipe that is easy to modify. You can substitute tofu in order to make it vegetarian or change up the veggies to appeal to your taste. I threw in an onion I needed to get rid of and it just added to the great taste. Next time I would use slightly less eggplant though or maybe mushrooms instead.
