Creme brulee is a pudding with a thin layer of caramel on top. Pudding is a traditional vanilla, but is often added lemon, orange, rosemary, chocolate, coffee, liquor, green tea, pistachios, coconut or some other fruit. The exact origin of this dessert is unknown. Creme brulee is served in small ceramic pots. It is served cold. Caramel on top can be prepared just before serving by putting small amount of sugar on pudding, then caramelize it with a kitchen torch.
