Phase 2 vegans only: Tofu 'Chicken' Noodle Soup. tofu (brown in a nonstick pan without oil), Metabolism Noodles, and sub a Phase 2 veggie (mushrooms, spinach, etc.) for the carrots.
This vegetarian vegetable tofu soup is made with enoki mushrooms and tofu. I used napa cabbage in this recipe but greens like bok choy may also be used.
