"THM Pancake Heaven" Just like buttermilk pancakes. 6 eggs 6 Tbsp oat fiber or THM baking blend 2 tsp vanilla, 8 oz 1/3 fat cream cheese 1 tsp Gluccie or Xantham gum, Sweetener to taste.I used 6 packets of Truvia I use my mixer after the cream cheese is softened. Mix the eggs and cream cheese first. Make sure your cream cheese is softened. Then add the remaining ingredients and blend. Fry up in a butter covered skillet. Enjoy! Crispy Blueberry Pancakes - fried in coconut oil, these have an amazingly crispy crust! THM:S, low carb, sugar free, gluten/nut free

Apple Upside-Down Cake - Use THM pancake batter recipe p223, double, & add tsp almond ext. Cook 6 peeled sliced apples in 2 tsp coconut oil, 6 tsp Truvia, 2 tsp pumpkin pie spice (added about 1/2 - 3/4 c of water as they cook), pour apple mixture in the bottom of a lightly sprayed 9x13 dish, pour pancake batter over apples. Bake for 30 mins @ 350. Flip onto cutting board. Cut in 12 pcs. Sprinkle w/ bit of sugar free syrup!
