Meal 18 was a great find from a friend. I did tofu AND chicken for extra protein - - - - Thai-style sweet and spicy pineapple fried rice with red bell pepper, cashews and cilantro. This is a healthy and quick, vegetarian weeknight dinner!
Coconut Rice: cups water 1 can cups) coconut milk ½ tsp. salt 2 cups jasmine rice Made! doesn't cook all the way through with above ingredients, may need to add water to the mix. great with veggies or chix -mm
Sweet and Spicy Thai Pineapple Fried Rice -- I'd try a tsp of sriracha and a tsp of garlic chili sauce because I think both would add nice flavor, but the rest of the recipe sounds so good. Love me some pineapple fried rice.
