After a pig hunt in Texas last spring, I brought home two bone-in hams from a small sow that I've been saving for something special. Here is one of them—a cured and smoked bone-in ham with a maple-whiskey glaze. A fresh ham can be intimidating, but it doesn't need to be. The smoking process is actually quite simple, but does take a week or so for the cure to do its thing. After that, it's a simple smoke interrupted a few times to brush the glaze on the ham. Feral Hogs in Texas, 2011, population of wild hogs has grown to more that 8 million head across Texas and has wreaked havoc on property, livestock, crops, pasture and city parks and golf courses. Female hogs can have as many as eight to twelve pigs several times a year. The population in an area can double in four months. The price tag of damage from Feral hogs is conservatively estimated to be about $52 million dollars per year. Feral hogs are now found in 40 states.
