Mexican Corn & Black Bean Salad 1-15 oz can corn, drained 1-15 oz can black beans, drained, rinsed 1/2 C sweet onion, diced 3/4 C red bell pepper, diced 1 C mayonnaise 2 T taco seasoning 1 C sharp cheddar cheese, shredded 1-10 oz bag chili cheese fritos Combine corn,beans,onion,red pepper in a bowl.Mix in mayonnaise,taco seasoning.stir in cheese. Crush fritos.add to the salad right before serving.
