Homemade gnocchi! Just 3 ingredients -- sweet potatoes, an egg, and gluten-free flour (use quinoa flour for Phase Great with a simple pasta sauce or ratatouille. Could try with egg substitute and pumpkin for a vegan option and something different:)
Sweet potato gnocchi with brown butter & sage. I think I just died and went to heaven. Trader Joes has a frozen version of this but I didn't realize you could make it at home, too! I will be trying this soon!!
