Christmas Rocky Road: It’s not that I felt my usual Rocky Road Crunch Bars needed any improvement (though fiddling with recipes is one of life’s pleasures) but I thought they would benefit from some seasonal adjustment. So, out go the Rich Tea biscuits and in come amaretti and – in the seasonal spirit – I’ve crammed in some Brazil nuts and glacé cherries (as red as Rudolph’s nose), along with snowy mini marshmallows.
Ginger bread - easy peasy. Dump everything in the processor and blitz, chill for 15 mins and then dough is ready. Dough handles well - good for kids. Also, it's not too sweet, so the resulting biccies can handle a little icing nicely.
If you don't already know - ginger is a winner! Throughout the world, this incredible root is enjoyed as a delicacy, medicine, or spice. Our gingernut biscuits with ground almonds, dried ginger and date syrup are deliciously chewy and crisp round the edges. Full of spice and just enough sweetness.
