Yellow Squash Muffins - This recipe is mind blowing in that it has buttery yellow squash and pecans in this breakfast muffin. I made this recipe minus the nuts and C of sugar. Tripled the cinnamin and used olive oil. They turned out pretty darn good!

Lemon Zucchini Bread - Cooking Classy- I made this into muffins. It makes 12 muffins and baked for 18 minutes. I used truvia sugar blend also. They turned out very good and very moist! I did not use the glaze.
