I love spinach souffle and normally just eat Stouffers. I'd been looking for an opportunity to make my own. I made this on Thanksgiving and it was easy and very tasty.

I used to LOVE Stouffer's brand spinach souffle. But the carb count was too high. Their recipe used skim milk and sugar! So I bought a bag of fresh spinach and headed home to recreate a favorite of mine. I used no recipe. I knew the basic ingredients are spinach, milk, and eggs.
