Baked Red Snapper with Garlic. Tried this, loved it! Used ground cayenne pepper instead of Cajun seasoning; green onions instead of chives; and subbed coconut oil for most of the butter. Also, baked asparagus spears on same baking sheet w fish for a one-sheet meal!
