Seafood Nachos - EXCELLENT but super rich! I added green onion to the seafood mixture and used "Mexican Blend" shredded cheese since I didn't have pepper jack. I also just melted the cheese in the microwave instead of messing w/the oven.
Medium size bag of small shrimp. Fry in butter for 5-10 minutes, add seasoning of your choice (I prefer creole). While that's cooking, prepare turkey or hamburger meat with any seasonings you want. Once it's done, dump it all into a big pot with 2 cans of Rotel Diced Tomatoes and Green Chilli's. Add about half a block of Velveeta cheese, stir it all together and simmer for 10 minutes, no more than 30. Very simple and delicious.
