These are so good to snack on and to keep in the Fridge for a quick breakfast. Pop one in the Microwave for 30 seconds and have a protein rich quick breakfast which will last unlike a Pop Tart.The best ones I have made were using Mozzarella Cheese and Hot Italian Sausage and Italian Spices but not for breakfast.
Sausage Muffins (12 muffins) 1 lb. breakfast sausage, cooked and drained 5 large eggs 1 C. bisquick 4 oz. diced green chilies, drained 1/4 C. diced pepperoni 3/4 C. shredded mozzarella cheese 3/4 C. shredded sharp cheddar cheese Beat the eggs in a mixing bowl, add the sausage and remaining ingredients, stirring to combine well. Spray a 12 cup muffin tin with cooking spray and fill each cup with the muffin mixture. Bake in a 375 degree oven for 20-25 minutes.
