Crispy Duck

CRISPY DUCK. I've always thought one of the best ways to eat duck was as the Chinese do, but I had never thought it would be so easy to cook. I say "cook". I do nothing except cut some fat off the duck and sit it on a rack on a roasting tin and put it in the oven for hours on end. Then, I take it out, set to with some forks and put some shop-bought Chinese pancakes on to steam.

Amazing Yorkies

amazing yorkies - same measurements, add eggs to measuring jug and check where it measures to. Add flour & milk to the same line. Add a pinch of salt.Whisk for 2min, put in fridge, don't rewhisk. In oven at 220 for about 10min. Use lard in Yorkshire pudding tins to reach high temperature.

Tomato soup

Jamie Oliver's tomato soup:: I roasted 6 large toms (which were going squidgy!) and 2 cored and de-seeded green peppers (which were going red) in the oven on 375F for 50 mins. I then followed the recipe and added the tomatoes and peppers when it was time to blend it. We served ours with a blob of fat free natural Greek yog and it was delicious.
