Black-Eyed Pea Salad So good and easy. My first time eating Black-Eyed Peas. I use red, orange, and yellow bell peppers and also doubled the dressing because after I got it all in the bowl it looked a bit dry. Got several compliments on it and will be adding this to my recipe box! :)

Fatfreevegan Creole blackeyed peas -- soaked and slow cooked the beans on low all day, then used them in the recipe. I used sriracha since I'm out of hot sauce. Pretty good, even without making rice.
