Broccoli, Ham, and Cheese Baked with Eggs ~ this was absolutely amazing. My husband has requested I make this at least once a week. It is definitely something you can eat breakfast, lunch, and/or dinner!
Scalloped Potatoes Recipe -- creamy, cheesy, irresistibly delicious, and made lighter with a few simple tweaks. I wasn't sure how the lighter version would work but it had plenty of taste. I may try this one for Easter this year.
