Chicken-Fried Turkey Cutlets with Redeye Gravy
Redeye gravy is a Southerner's trick of using coffee to make a quick pan gravy from the drippings that remain in the pan after frying ham steaks. Original Red Eye Gravy is just country ham drippings and strong black coffee. I have had it many times made by my MomMoo (mom) like this poured hot over grits and fried eggs with a hot buttered biscuit to dip in it! YUMMMMM!!!! When I want the real deal this is how I still make it. But my kids think the bitter has to be calmed down so I go to my 79 year old Aunt Thelma's recipe.
UNCOOKED - Dont remove rind. Bake @ 325 (to 160deg.) 10-15lb ham: 18-20min/lb., 5-7lb half ham: 20min/lb. COOKED: Bake @ 325 (to 140deg). 10-15lb ham: 15-18min/lb, 5-7lb half ham: 18-24min/lb. Remove a ham 30min before done to GLAZE. INCREASE oven to 425. Remove rind (except a collar around shank bone). Score top fat. Combine 1+1/3c brown sugar, 2tsp dry mustard, 3Tbsp cider vinegar, wine or ham drippings. Pat over ham. May stud with cloves/pineapple. REDUCE oven to 325 again. Bake 30min.
