Breadfruit Cake: 1 very ripe breadfruit, 3 eggs, 1C oat flour, 1/4C truvia, 3C coconut milk, a pinch of salt. Peel the breadfruit, discard the heart and finely grind the flesh. Whisk the eggs with the sugar, and then blend with the flour, mashed breadfruit, coco milk and the salt. Pour into a buttered mold and cook in the oven at 150o. for 60 minutes. Serve cold, cut in thick slices.
