Recipes using pork fillet

This recipe is a nod to the traditional beef Wellington, but I'm using minced beef instead of beef fillet and throwing in a hint of chilli and cumin for an updated flavour. You could also use pork mince, lamb mince or even a mixture, and, during the season, make it even more interesting by adding some game. And, as you've probably noticed, I've decided to make mine into individual rolls, so everyone gets their own. What a treat!

Mary's pavlova is topped with pretty berries, but most fruits work well so feel free to use what's in season. It's a great dessert for Christmas because it can be made well ahead.

Chinese-style pork fillet with fried rice. I served 2 adults & 2 toddlers. I used 350g pork,1tsp 5spice, 1tbsp honey, & not all of the cornflour). Also used oil for frying! For the rice I used oil for frying, a whole bunch of spring onions (put half in before the rice and half at the end), a mug full of frozen peas and sweetcorn, a little soy sauce, and also a few cashew nuts at the end. I made an omelette with 3 eggs, and served it separately, as the kids love omelette but not pork.

Pork Tenderloin. Found this recipe when looking for something different to go with the turkey. I only used one tenderloin as it's expensive. The butcher flattened it and cut a pocket in it for me. Stuffing delicious!
