Traditional Hoppin John is a staple New Year's day dinner in the south. It's supposed to bring good luck and prosperity to anyone who eats it.  Classic Hoppin John is made with ham hocks or bacon and cooked in one pot.  My version uses, smoked sausages and healthy broccoli, frozen black-eyed peas and for kick, a couple pinches of crushed red peppers, It's quicker, more veggies and it's  still delicious. An easy hearty dish ready in about 30 minutes or less.

I would love to try this as a vegan version, sub Trader Joe’s Sou Chorizo for the sausages and use veg broth instead of chicken stock.
