One-pan summer eggs. splash olive oil in pan. add 2 courgettes diced. fry, stirring occasionally until they start to soften. add 7 oz cherry toms, halved & 1 clove garlic, crushed. Season. make gap in mix & crack 2 eggs in. put lid or foil on top. cook 2-3 mins until eggs done to your liking. Scatter fresh basil if wanted.
