Something really special about this Vegetable Fried Rice is the Indo-Chinese influence in this recipe. It is extremely easy as I record and they taste delicious on its own and out of the world when paired with a Saucy Gobi Manchurian or a Schezwan Gravy.
I haven't posted any Indian Chinese recipes in a while and was going through the archives when I realized that I had not blogged a popular Indian Chinese appetizer, Vegetable Manchurian. Its prepared almost on the same lines as Gobi Manchurian except that we use finely chopped mixed vegetables instead of Gobi (Cauliflower).
We make this very often at home. It is one of my go to recipe for gobi pakoras. Mom loved fried cauliflower like this or gobi 65 more than manchurians.
