Blackcurrant pavlova - pink dye in meringue, topped in sweetened cream and blackcurrants. BC - 200 grams of blackcurrants, Juice of 1 lemon, 4 tablespoons of sugar, 1/2 tsp corn-starch - Wash and de-stalk currants, put into pan, add l.juice, boil for one min, add sugar mix til sugar is dissolved. Heat briefly, add corn starch mixed with few tablespoons of cold water. Bring to a boil and set aside. Fruits should be in syrup. If necessary, add a little more flour or water.
Cock-a-Leekie pot pie. You can top with mash or you could top with puff pastry. If you're not a parsnip fan you could sub turnip, tattie, carrot, or other root vege. NOTE: corn flour = American corn starch and you can sub sour cream for creme fraiche. This recipe is an excellent base upon which to experiment.
Peppermint creams - The peppermint extract can be added to taste and does add moisture. These make great pressies for tricky elderly family members who say they want and need nothing as they can be presented in a glass jar with a bow and a "the kids made these for you".
