TIP FOR ALL CHEESECAKES: Spray the sides ONLY of your springform pan--that way the cake will separate from the sides so no more cracks. Also, even tho' it is a pain, always set pan into another pan with about 1" of water in it and let it set for 1 hour after you turn the oven off. Haven't had a crack in a cheesecake since I finally followed the rules. Happy baking!

Tall and Creamy Cheesecake- this is by far the best cheesecake ever. I made it and it tasted just like the one i get in the bakery. Creamy, dense and lush. The only change i made was to use a combo of sour cream and heavy cream,That's it. Excellent recipe..Thanks Dorie!!
