Peanut Butter Chocolate Chip Pancakes


Quick pumpkin pancakes using pancake mix. Heat griddle to 375 or skillet to medium-low. Stir together 2 cups of Aunt Jemima Complete pancake mix, 2 T white sugar, 1/3 t ground cinnamon, 1/3 t ground nutmeg. Add 1 1/4 cups water and stir until large lumps disappear. Fold in 1 cup of canned pumpkin purée (not pumpkin pie filling). Pour about 1/4 cup of batter onto griddle. Flip when top bubbles and bottom is starting to brown. Made 12 pancakes.
