Paleo Breakfast Casserole. Susanna says: this is so good! We honestly don't miss the cheese. We make it on Sunday nights and then eat for breakfast Monday - Thursday! Modifications I made: used the 8x8 dish listed, but we do 8 eggs and add 1/4c almond milk in addition to the coconut milk used. We also do 1/2lb of pastured pork breakfast sausage, instead of the kind called for in the recipe.
