Chunky Oven Fries Tossed in 2 tbsp of olive oil and sea salt. Cooked for 20 min and turned every 5 min so that each side was slightly browned. Better than deep fried!!!

Oven-roasted chips

Good oven baked chips (fries if you're American). Although I would always soak them in water for 30minutes - 1 hour.

Healthy egg & chips

Healthy egg & chips - had this for tea tonight as part of a fast day. It was really tasty and a substantial amount . Two substitions though - I used low calorie spray instead of oil and cherry tomatoes as I had no mushrooms. Definately be trying this again (maybe as breakfast next time)!

If you know you are going to be pushed on Christmas Day, then it is possible to half-roast the potatoes the day before (see Preparing Ahead, below). On Christmas Day the potatoes just need to be re-roasted in a hot oven for about 20 minutes.
