Red Curry Lentils — Pinch of Yum I made this for my vegan daughter and s-I-l, and they raved about it...said it was restaurant quality. It's fairly easy, and I made it early in the day and stuck it in the crock pot to keep warm. Delicious with brown basmati rice.
eggplant curry recipe: eggplant, ginger, stewed tomatoes, spices. needs much longer to cook than 15 min. cut up the eggplant small, 1 x 1 inch. also needs more sauce, i added some red sauce + water. was pretty good!
