Red Lentil Dhal/tarka - This quick and flavourful red lentil dahl is a great vegan midweek meal or alternative homemade curry.

One of our fave fall and winter meals, this Creamy Coconut Red Lentil Dahl is super-flavourful and simple and inexpensive to prepare. It's also gluten-free and vegetarian (with a vegan option).

Used 4 c. broth, 2 t. ginger powder, pepper flakes, tomato sauce instead of tomatoes and added 2 t. Was awesome!

This was a little effortful the first time, but I think, in the future, I'll be able to throw this together in about 20 minutes. Boil water, start rice in rice cooker, cook lentils, mix spices together in coconut milk. Once lentils are done, mix in spices/coconut milk. Then rice is done. BAM.  Also, I cooked the rice with half water, half coconut milk, and salt.
