Mediterranean healthy edamame salad, so simple to throw together.  2 cups shelled edamame 1/3 cup of onion chopped  1 tomato chopped  1 jalapeño finely chopped  1 cup corn kernels  Cilantro and basil finely chopped   Lemon Vinaigrette  1/2 cup lemon juice 2 tbsp dijon mustard 2 tbsp avocado oil 1 tsp sea salt  1 tsp ground black pepper  In a large bowl, whisk lemon juice, mustard, avocado oil, salt, pepper, then combine the rest of the ingredients and toss to coat.
