SWEET POTATOES WITH MARSHMALLOWSFor many of us, this Thanksgiving stalwart is beyond untraditional. To a European reader, no doubt to any non-American reader, it is downright alienating. Although I’ve become an eater of sweet potatoes over the years, I’ve never quite taken the marshmallow element seriously, presuming it to be so obviously excessive, as unfathomable as a memory from someone else’s childhood.
Sweet potato (yam) casserole -- sweet side for Thanksgiving! 1 (40 oz) can of Bruce’s cut yams, drained ½ cup brown sugar ½ teaspoon cinnamon ¼ teaspoon salt 1 egg, beaten 4 tablespoons melted butter 1 (16 oz) bag of miniature marshmallows
Candied Yams with Marshmallows: Canned or peeled yams, 1/4c butter, 1/4-1/2c brown sugar, dash of cinnamon, mini marshmallows. 400 degrees for 20 minutes; longer for peeled yams. Add marshmallows on top 5-10 minutes before 'doneness.'

Sweet Potato Casserole with Marshmallow & Pecan Streusel. Holy smokes this was good! Huge hit on Thanksgiving. I made recipe and put in pyrex pan. Also made alternating diagonal stripes of the streusel and the marshmallows instead of mixing together.
