Mutabbal – Middle Eastern Eggplant and Tahini Dip

Mutabbal- Eggplant TahiniDip 1/4 cup olive oil,1 eggplant, clove garlic,2 tblsn tahini 2 tblsn full-fat yogurt, juice 1 lemon 1/4 cup chopped parsley,1/4 cup pomegranate (seeds),salt/pepper,1/4 tspn paprika. Method:Oven 400d. Poke holes in eggplant on baking tray. Roast 30 min. Cool,scoop flesh out. Mash garlic & eggplant till smooth,add tahini, yogurt, lemon juice, mash until smooth Add in salt, pepper, paprika, half parsley, half olive oil. top with pom., parsley, paprika/ olive oil.

I'm going to tell you about Lebanese man'oushe—a flatbread with endless possibilities for toppings and flavorings—and I'm not going to make the inevitable comparison to the dreaded "p" word. Lebanese Meatballs

Lebanese Meatballs. Excellent--handled very lightly so they were fluffy and not dense/hard. Used all beef (no lamb on hand) and finely minced white onion as I didn't have green onions, made them appetizer size and fried in a skillet with olive oil. Packed into pita with homemade tzatziki, they were delicious!
