How to Make Japanese Kewpie Mayo Makes about 1 cup 2 tablespoons plus 1 teaspoon cider vinegar 2 tablespoons dashi, homemade or instant (optional) 1 teaspoon Dijon mustard 1 egg yolk 3/4 cup canola oil 1/2 teaspoon sugar 1 teaspoon kosher salt
Japanese Mayo (just like Kewpie Mayo). So easy to make and you can use it straight away. I made a few changes (used what I had in the cupboard). Used sunflower oil instead of canola oil, used 1 tsp of lemon & 1 tsp lime juice instead of yuzu juice, used 1/4 tsp mustard powder instead of hot japanese mustard, did not add dashi powder and added 30ml hot water instead of 50ml.
Japanese-style Hamburgers - Angus beef and umami flavours get together in this crispy, succulent burger guaranteed to satisfy at any time of the day. Oh, and Okonomiyaki sauce and Kewpie mayonnaise are the winning sauce combos here. | wandercooks.com
