Best Ever Chunky Guacamole 1 large ripe tomato 3 avocados , very ripe but not bruised juice 1 large lime handful coriander , leaves and stalks chopped, plus a few leaves, roughly chopped, to serve 1 small red onion , finely chopped 1 chilli , red or green, deseeded and finely chopped tortilla chips , to serve
Tricolour Cous Cous Salad. Serves 4: - 200g Cous cous (dry weight), cooked. - 250g Cherry Tomatoes, halved. - 2 Avocados, peeled, stoned, chopped. - 150g Ball Mozzarella, torn into chunks. - Handful of rocket and/or spinach leaves. To dress: 1 tbsp Pesto, Juice of half a lemon, Good drizzle olive oil. Top with basil and black pepper. For a main course, serve with warm wholemeal pitta breads and some homemade hummous (chickpeas + garlic + lemon juice = easy peasey hoummous).
I make this every year for cheap-but-wonderful Christmas presents for family and friends. And I always make sure that there is enough made so that I can keep at least six jars for myself. This is brilliant on cheese sandwiches, in a chili, or to pep up some chicken wings.
Homemade Tomato Juice - Homemade tomato juice is possibly the best thing ever. It tastes so much better than V8 Juice and probably a lot better for you since you know exactly what is in it… plus it has a lot less sodium. I am not even kidding, this stuff is like liquid gold at our house. Even the kids love drinking it! I like it best drinking it ice cold but also using it in recipes and as a tomato base in soups (seriously, yum).
