crispy baked potato skins Bake whole @ 425 until soft. Let cool enough to handle, then cut in half and scoop out potato. Brush skins with oil, and bake @ 475 for 12-15 minutes (skin side up) until crispy. Flip over, lightly salt/pepper and fill with cheese & bacon and bake for another 2+ minutes until cheese is melted. Top with sour cream & scallions.
