Really easy lemon curd been making it for years. Put 3 large eggs,8oz caster sugar in large heatproof bowl over pa hot water on low heat whisk briskly add 3oz butter & grated zest & juice 2 lemons. Whisk altogether until butter & sugar dissolves & mixture is thick & smooth. Makes about 2lb pour into sterile jars. Delicious on hot buttered toast.
