Mexican Chicken Salad Spirals - i realized after I started that I forgot to get rotel so subbed in salsa. After taste testing I added in more chili powder, some cumin, and ground red pepper for heat and about 1/2 cup of chopped cilantro. Definitely yummy and really nice on a hot summer day.
