Roasted grape tomatoes - cut in half, toss with lots of olive oil, salt & pepper, & lots of sliced garlic. Try not to crowd them on the cookie sheet - the garlic gets crispy, & the tomatoes are half-way to "raisin" texture! To die for!
Commenter said: I use grape tomatoes and dry at 170 for about hours. i dip them in white vinegar before putting them in jars with a clove of garlic, a bit of fresh herbs and covering with olive oil. I keep mine in the frig for many months

tomato & basil soup *I used a mixture of roasted cherry tomatoes, canned diced tomatoes, and canned tomato sauce plus I had to sub dried basil for fresh. I also added in a couple handfuls of spinach. The result was an ok soup.
