Used a mixture of Brie, havarti and cotswald double gloucester (with chives) instead of recommended cheese. This was what we had on hand and the woman at trader joes said it was a good Mac and cheese combo. She was right.
We stock this fairly labor intensive cheese as that is hand layered. The contrasting flavors and textures create a harmonious blend. The cheese is dense yet also creamy. It is salty and sharp but also nutty.
