Cut sweet potatoes into steak-fries sized pieces. Place in a bowl and toss with olive oil and spices until fully coated. Lightly oil one or two large cookie sheets. Spread on cookie sheets in a single layer. Roast for 30 to 40 minutes.Stir and flip about every 10 minutes
