Mary Engle Pennington (1872-1952) - “The Ice Lady” was a pioneering refrigeration and food safety researcher. Mary headed the US’s Food Safety Lab, set standards for food processing, researched the ideal temperatures for food safety, and worked with Herbert Hoover to provide famine relief during World War I.
