Thai Green Curry. A simple recipe that is easy to modify. You can substitute tofu in order to make it vegetarian or change up the veggies to appeal to your taste. I threw in an onion I needed to get rid of and it just added to the great taste. Next time I would use slightly less eggplant though or maybe mushrooms instead.
