Dried orange peel: Spread thinly cut strips of orange peel (without white pith) in a single layer on a parchment-lined baking sheet and put them in a 250 F oven until you see them start to curl - 15 to 25 minutes. Cool completely, store in airtight container in fridge.
The best Christmas cake recipe I have tried. It was a great success last year and I look forward to trying it again this year. I used brandy and let it mature for about 8 weeks feeding it more brandy every now and again.
