Cullen Skink is the tastiest soup on the planet. it's basically scottish chowder, I suppose. really simple but totally flavour-packed. smoked haddock poached in milk and cream with leeks and potatoes. I love it made really chunky and served with crusty hunks of french bread.
potato & leek soup (Slowcooker) - 4 potatoes, 2 leeks white and light green parts, 32 oz. chicken broth, salt, pepper, Half-n-Half cream Cube the potatoes into 1″ pieces. Slice leeks and place in bowl of water; swish around to dislodge dirt and sand; let stand for 2-3 minutes. Add potatoes, leeks and chicken broth to crock pot, add salt and pepper. Cook on low 6 hrs. puree the soup. stir in 2 ounces of half-n-half cream.
